Product Description
This Idiazabal Smoked PDO cheese is crafted from raw Latxa sheep’s milk and comes from the Basque and Navarre regions of Spain. Its distinct character comes from a traditional smoking process over beechwood, hawthorn, or cherry wood, which imparts a subtle yet expressive smoky flavour that enhances its naturally creamy and buttery profile.
Aged for at least two months, it features a firm and slightly elastic texture. The rind develops a darker tone during the smoking process, while the interior remains a delicate ivory to pale yellow. Its flavour is deep and complex, with notes of nuttiness and gentle earthy undertones.
Perfect enjoyed thinly sliced on a cheese board, finely grated over dishes, or savoured on its own.

Raw Latxa sheep’s milk, salt, animal rennet, cheese cultures, preservative: lysozyme (from egg).
Recommended Use

Once opened, keep refrigerated at 2–6°C (36–43°F).
